Smothered Pork Chop Scalloped Potato Casserole is the epitome of comfort food, featuring succulent pork chops layered with creamy, thinly sliced russet potatoes.   • 4 bone-in or boneless pork chops (1 inch thick)
  • 4 medium russet potatoes (2 lbs), peeled and thinly sliced
  • 1 cup heavy cream
  • 1 medium onion, sautéed until translucent
  • 1 tsp garlic powder
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and coat a large baking dish with nonstick spray.
  2. Peel and slice the russet potatoes into thin (¼ inch) rounds.
  3. In a skillet over medium heat, sauté the sliced onion in oil until translucent (about 5 minutes).
  4. Layer half of the potato slices in the baking dish; season with salt and pepper and add half of the sautéed onions on top.
  5. Place pork chops on top of the potato layer; season as desired.
  6. Add the remaining potato slices and onions, then pour heavy cream evenly over everything.
  7. Sprinkle shredded cheddar cheese generously on top.
  8. Cover with foil and bake for 1 hour. Remove foil and bake for an additional 10 minutes until golden brown.
