  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium onions, sliced
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/4 cup all-purpose flour
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken breasts with salt and pepper. Sear in the skillet for about 5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add sliced onions and sauté until caramelized (about 6 minutes). Stir in minced garlic and cook for an additional minute.
  4. Sprinkle flour over the onions, stirring well. Slowly pour in chicken broth and soy sauce while stirring continuously until combined. Let simmer for about 3 minutes until slightly thickened.
  5. Return the chicken to the skillet, spooning gravy over it. Cover with aluminum foil and bake for 20-25 minutes until cooked through (165°F or 74°C).
  6. Serve hot over mashed potatoes or rice, drizzling extra gravy on top.
