  • 2 sprigs fresh rosemary
  • Salt and pepper to taste
  • 2 tablespoons tomato paste

Instructions

  1. Prepare your ingredients by chopping the onions and mincing the garlic.
  2. In a large skillet over medium-high heat, add oil and sear the lamb shanks until browned on all sides.
  3. Remove the shanks and sauté onions, garlic, and carrots in the same skillet for about five minutes until soft.

  5. Transfer everything to a slow cooker: lamb shanks, sautéed vegetables, stock, herbs, salt, pepper, and tomato paste. Stir gently.
  6. Cook on low for 8 hours or high for 4 hours until meat is tender.
