  • 1 lb large shrimp, peeled and deveined
  • 4 cups mixed greens (arugula, spinach, romaine)
  • 6 slices thick-cut bacon
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • ½ cup blue cheese crumbles
  • 3 tbsp olive oil
  • 3 tbsp red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and dry mixed greens. Chop cherry tomatoes and slice avocado.
  2. In a skillet over medium heat, cook bacon until crispy (8-10 minutes). Transfer to paper towels.
  3. In the same skillet, sauté shrimp seasoned with salt and pepper until pink (3-4 minutes per side). Remove from heat.
  4. In a bowl, whisk together bacon fat, olive oil, red wine vinegar, salt, and pepper for the dressing.
  5. In a large bowl or platter, layer mixed greens first followed by shrimp, bacon pieces, cherry tomatoes, avocado slices, and blue cheese.
