  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 large red onions, sliced thickly
  • 1 cup Kalamata olives (pitted)
  • 1 cup cherry tomatoes (halved)
  • 4 cloves garlic (minced)
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and prepare a large baking sheet with nonstick spray.
  2. In a bowl, drizzle olive oil over chicken breasts; season with salt, pepper, and half the oregano.
  3. In another bowl, combine red onions, cherry tomatoes, olives, garlic, remaining oregano, and lemon juice; toss well.
  4. Place seasoned chicken on one side of the sheet pan and pile veggies on the other side.
  5. Roast for 25–30 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Serve hot with an extra drizzle of lemon juice.
