  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium red onion, sliced
  • 4 garlic cloves, minced
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup honey
  • Juice of 1 lime

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine chicken breasts with soy sauce, honey, minced garlic, and lime juice; toss to coat well.
  3. While the chicken marinates for about 15 minutes, chop the bell peppers and red onion into bite-sized pieces.
  4. On a large sheet pan, spread the marinated chicken on one side and arrange the chopped vegetables alongside it. Top with fresh pineapple chunks.
  5. Bake in the preheated oven for 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C) and is nicely caramelized.
