  • 1 ½ cups whole milk
  • 2 large eggs
  • 2 cups fresh spinach
  • 1 cup shredded Gruyere cheese
  • 2 tablespoons butter (for cooking)
  • Pinch of salt
  • Freshly ground black pepper to taste

Instructions

  1. In a mixing bowl, whisk together flour, milk, eggs, salt, and pepper until smooth. Let the batter rest for 30 minutes.
  2. In a skillet over medium heat, melt one tablespoon of butter and sauté the fresh spinach until wilted (about 3 minutes). Set aside.
  3. In the same skillet, melt another tablespoon of butter. Pour in about one-third cup of batter and swirl to coat the bottom evenly. Cook for roughly 2 minutes until edges lift slightly.
  4. Sprinkle shredded Gruyere cheese and sautéed spinach on one half of the crepe, fold it over like a taco, and cook for an additional minute until the cheese melts.
  5. Repeat with remaining batter and serve garnished with extra cheese or sour cream if desired.
