  • 1 cup rolled oats
  • 2 cups low-sodium vegetable broth
  • 1 cup chopped kale or spinach
  • 1/2 cup shredded carrots
  • 2 soft-boiled eggs
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 tbsp chopped green onions
  • 1 tbsp toasted sesame seeds

Instructions

  1. In a medium saucepan, bring vegetable broth to a boil. Add rolled oats and simmer for 5-7 minutes until creamy.
  2. While oats cook, sauté kale or spinach and carrots in sesame oil over medium heat for about 3-4 minutes until tender.
  3. Soft-boil eggs by boiling them for 6 minutes, then transfer to ice water to stop cooking.
  4. Stir soy sauce into cooked oats and fold in sautéed veggies.
  5. Scoop oatmeal into bowls, slice soft-boiled eggs in half, and place on top.
  6. Garnish with green onions and sesame seeds before serving.
