  • 2 cups crushed pretzels
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 1/2 cup heavy whipping cream
  • 3/4 cup brown sugar
  • 1 tsp vanilla extract
  • Sea salt (for topping)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed pretzels, melted butter, and sugar. Press into the bottom of a greased springform pan and bake for about 10 minutes until golden.
  2. Beat together cream cheese and sour cream until smooth. Gradually add sugar and vanilla until combined. Pour over the crust and bake for 50-60 minutes, or until set around edges.
  3. Let cool in the oven for an hour before transferring to room temperature. Then chill in the fridge.
  4. For the salted caramel sauce, heat brown sugar and heavy cream in a saucepan until thickened, about five minutes. Stir in sea salt.
  5. Once cooled, pour caramel sauce over cheesecake, garnish with crushed pretzels, slice, and serve chilled.
