Ingredients

Scale
  • 1 whole sea bass (about 2 lbs), cleaned and scaled
  • 2 cups coarse sea salt
  • 2 lemons, thinly sliced
  • 1 cup fresh herbs (e.g., parsley and thyme)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Rinse the sea bass under cold water and pat it dry. Season the cavity generously with salt and pepper.
  3. Stuff the fish with lemon slices and fresh herbs.
  4. In a bowl, mix coarse sea salt with enough water to achieve a damp texture. Spread half of this mixture on the baking dish.
