  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt; set aside.
  3. In another bowl, mix sugar and oil until combined. Add eggs one at a time, beating well after each addition. Stir in buttermilk, food coloring, and vanilla.
  4. Gradually add the dry ingredients to the wet mixture; stir until just combined.
  5. Fill muffin tins two-thirds full with batter and bake for 20-25 minutes or until a toothpick comes out clean.
  6. For the frosting, beat together cream cheese and butter until creamy. Gradually add powdered sugar and vanilla until smooth.
  7. Once cooled, frost each cupcake generously.
