Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with festive liners.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and a pinch of salt.
  3. In another bowl, mix sugar and oil; then add buttermilk, eggs, food coloring, and vanilla extract. Blend until smooth.
  4. Gradually combine the dry mixture with the wet ingredients until just blended.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Cool completely on wire racks.
  6. For frosting: Beat cream cheese and butter until creamy. Gradually add powdered sugar and vanilla until smooth. Frost cooled cupcakes and decorate as desired.
