  • 8 oz cream cheese (softened)
  • 1 cup fresh raspberries
  • ½ cup sour cream

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two round baking pans.
  2. In a mixing bowl, cream together butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla. Combine flour and baking powder; gradually add to the wet mixture until just combined.
  3. In another bowl, beat cream cheese until smooth. Mix in sour cream and sugar, then add eggs while mixing on low speed until blended.
  4. Mash raspberries in a separate bowl until chunky.
  5. Pour half of the cake batter into each pan, layer with half of the cheesecake mixture, dollop raspberries on top, and gently swirl using a knife.
  6. Bake for 30-35 minutes or until a toothpick comes out clean from the center. Let cool before serving.
