  • 1 cup cooked quinoa (well-drained)
  • 1/2 cup unsalted butter (melted)
  • 1/4 cup warm milk (110°F)
  • 2 tsp active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt

Instructions

  1. Warm the milk and dissolve the yeast and sugar; let sit until bubbly.
  2. In a large bowl, combine flour and salt. Create a well in the center.
  3. Add the yeast mixture and melted butter with cooked quinoa in the well; stir until shaggy dough forms.
  4. Knead on a floured surface for about 5 minutes until smooth; let rise in an oiled bowl covered with a damp cloth for an hour.
  5. Roll out dough into a rectangle, cut into triangles, and roll from wide end to point.
  6. Preheat oven to 375°F (190°C). Allow croissants to rise for another 30 minutes before baking for 20-25 minutes until golden brown.
