Pumpkin Lasagna is a delightful twist on traditional comfort food, featuring layers of creamy pumpkin puree, rich ricotta cheese, and gooey mozzarella, all nestled between tender lasagna noodles. This dish is perfect for fall gatherings or cozy dinners at home, bringing warmth and flavor to your table.

  • 9 lasagna noodles (regular or no-boil)
  • 1 cup pumpkin puree
  • 15 oz whole-milk ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup fresh spinach (or ½ cup frozen, thawed)
  • 3 cloves garlic (minced)
  • ¼ tsp nutmeg
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using regular lasagna noodles, cook according to package instructions until al dente. Drain and set aside.
  3. In a bowl, mix ricotta cheese, eggs, garlic, spinach, nutmeg, salt, and pepper until combined.
  4. Spread a thin layer of marinara sauce in the baking dish. Layer noodles on top followed by half of the ricotta mixture and half of the pumpkin puree.
  5. Repeat with another layer of noodles, marinara sauce, remaining ricotta mixture, and pumpkin puree. Top with more noodles and finish with marinara sauce and mozzarella.
  6. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 15-20 minutes until golden brown.
