  • 1/2 cup pomegranate juice (pure, no added sugars)
  • 2 tbsp honey
  • 3 garlic cloves (minced)
  • 2 tbsp low-sodium soy sauce
  • 1/2 cup pomegranate seeds (fresh or frozen)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the pomegranate juice, honey, minced garlic, and soy sauce.
  3. Place the salmon fillets skin-side down on the baking sheet and pour half of the marinade over them. Let marinate for 15-30 minutes.
  4. Bake the salmon for 12-15 minutes until it flakes easily with a fork. Broil for an additional minute if desired.
  5. Drizzle the remaining marinade over the cooked salmon (discard any that touched raw fish) and top with pomegranate seeds before serving.
  6. Garnish with chopped fresh parsley.
