  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup fresh lemon juice (about 34 lemons)
  • Zest of 1 lemon
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine flour and 1/2 cup granulated sugar. Cut in softened butter until crumbly. Press the mixture into the bottom of the baking dish to form the crust.
  3. Bake the crust for about 15 minutes or until lightly golden.
  4. While the crust cools, whisk together the eggs, lemon juice, lemon zest, and remaining sugar in another bowl until smooth.
  5. Pour the lemon mixture over the cooled crust and return to the oven for another 20-25 minutes until set.
  6. Allow to cool completely before slicing into squares and dusting with powdered sugar.
