  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 cup fresh pesto sauce
  • 4 oz cream cheese
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 cup whole milk
  • 1 cup shredded mozzarella or parmesan cheese
  • 2 tbsp olive oil (for drizzling)

Instructions

  1. Preheat your oven to 375°F (190°C). Season chicken with salt and pepper, place in a greased baking dish, and bake for about 25 minutes until cooked through.
  2. While the chicken bakes, whisk together flour, eggs, milk, and a pinch of salt in a bowl until smooth. Let rest for 10 minutes.
  3. Heat a non-stick skillet over medium heat. Pour in half a cup of batter and swirl to coat the pan evenly. Cook until edges lift slightly (about 2 minutes), then flip.
  4. Once baked, shred the chicken into bite-sized pieces and mix with pesto and cream cheese.
  5. Place chicken mixture on each crepe, sprinkle with cheese, fold them over, and transfer back to the baking dish. Drizzle with olive oil and bake for an additional 10 minutes until heated through.
