  • 1 cup white rice
  • 1 cup fresh cilantro leaves
  • 2 green chili peppers (jalapeños work well)
  • 2 tbsp lime juice (freshly squeezed)
  • 3 cloves garlic
  • ¼ cup mayonnaise
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly coat a baking dish with nonstick spray.
  2. Season the chicken thighs generously with salt and pepper, then place them skin-side up in the baking dish.
  3. Rinse the rice under cold water, then combine it with 2 cups of water in a saucepan. Bring to a boil, reduce heat, cover, and simmer for about 20 minutes until tender.
  4. In a blender, combine cilantro, jalapeños, garlic, lime juice, mayonnaise, and salt. Blend until smooth.
  5. Bake the chicken for 25-30 minutes until cooked through (internal temperature should reach at least 165°F or 74°C).
  6. Serve the chicken over rice and drizzle generously with green sauce.
