  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (cold, cut into small pieces)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 8 oz mascarpone cheese (fresh)
  • 2 ripe persimmons (thinly sliced)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix flour and sugar. Cut in cold butter until crumbly. Gradually add cold water until dough forms. Wrap and chill for 30 minutes.
  2. Roll out dough on a floured surface to an eighth-inch thickness. Fit into a tart pan and trim excess dough.
  3. Blind bake the tart shell with parchment paper and weights for 15 minutes until lightly golden. Cool slightly.
  4. Mix mascarpone cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition. Pour into cooled tart shell.
  5. Arrange sliced persimmons on top of the filling.
  6. Bake for another 25-30 minutes until set and lightly browned. Cool before serving.
