  • 2 salmon fillets (6 oz each)
  • 1 medium spaghetti squash
  • 1/3 cup fresh orange juice
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/4 tsp cayenne pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Cut the spaghetti squash in half lengthwise, scoop out the seeds, and place cut-side down in the baking dish. Add water to cover half an inch of the bottom.
  3. Roast the squash for 30-40 minutes until tender and easily shredded with a fork.
  4. In a bowl, whisk together orange juice, honey, garlic, olive oil, salt, pepper, and cayenne.
  5. Place salmon fillets on a lined baking sheet and drizzle with half of the marinade; let it sit while the squash cooks.
  6. Bake both the salmon and spaghetti squash for an additional 12-15 minutes until the salmon flakes easily and reaches an internal temperature of at least 145°F (63°C).
  7. Serve hot, drizzling remaining marinade over both components.
