  • 1 medium yellow onion, diced
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach (or thawed frozen spinach)
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
