  • 1 package (17.3 oz) puff pastry sheets
  • 2 cups fresh mushrooms (cremini and button), finely chopped
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp fresh thyme or parsley, chopped
  • 1 egg, beaten (for egg wash)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, heat olive oil and sauté diced onions until translucent. Add chopped mushrooms and cook until tender.
  3. Stir in minced garlic and fresh herbs; season with salt and pepper. Cook for another minute.
  4. Roll out puff pastry on a floured surface; cut into 4-inch squares.
  5. Spoon about one tablespoon of the mushroom mixture onto one half of each square. Fold over and seal edges with a fork.
  6. Brush each pastry with beaten egg for a golden finish. Place on a parchment-lined baking sheet.
  7. Bake for 20-25 minutes until puffy and golden brown.
