Mushroom and Thyme Vol-au-Vents are elegant, flaky pastries filled with a rich mixture of sautéed mushrooms and fragrant thyme.   • 1 sheet puff pastry (thawed)
  • 8 oz fresh mushrooms (sliced)
  • 2 tsp fresh thyme (chopped)
  • 1/2 cup heavy cream
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a floured surface and cut into circles about three inches in diameter, creating two for each vol-au-vent.
  3. Score a smaller circle inside each larger one to create a border.
  4. Bake the pastry for 15-20 minutes until golden brown.
  5. While baking, heat olive oil in a skillet over medium heat. Sauté onions and garlic until translucent, then add mushrooms and thyme; cook until tender.
  6. Stir in heavy cream, season with salt and pepper, and let simmer for a few minutes.
  7. Once baked, fill the pastry cases with the mushroom mixture and serve warm.
