  • 1/4 cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

  • 2/3 cup mulberry jam (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  3. In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry mixture to the creamed mixture on low speed until just combined.
  4. Scoop tablespoon-sized portions of dough and roll them into balls. Place on prepared baking sheets about two inches apart. Create an indentation in the center of each cookie.
  5. Fill each indentation with about half a teaspoon of mulberry jam.
  6. Bake for 12-15 minutes until lightly golden around the edges. Allow to cool before serving.
