  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Water or vegetable broth as needed

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, slicing the carrots, and cutting the lamb into pieces.
  2. In a large pot or Dutch oven over medium heat, warm the olive oil. Add the chopped onion and sauté until translucent. Stir in minced garlic until fragrant.
  3. Increase heat to medium-high, add lamb pieces, and brown them on all sides.
  4. Sprinkle in cumin, cinnamon, paprika, salt, and pepper; stir to coat the lamb evenly.
  5. Add sliced carrots and chickpeas; pour in enough water or broth to cover everything by about an inch. Bring to a boil then reduce heat to low.
  6. Cover partially with a lid and let simmer for about one hour until the lamb is tender.
