  • 1 cup sour cream
  • 1 ½ cups shredded sharp cheddar cheese
  • ¼ cup chopped green onions
  • ½ cup crispy bacon bits
  • 4 tbsp unsalted butter (for topping)
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and chop the russet potatoes into even chunks. Boil in salted water until fork-tender (15-20 minutes).
  3. Drain the potatoes and return them to the pot. Mix in sour cream, half of the cheddar cheese, salt, and pepper until creamy.
  4. Fold in green onions and bacon bits.
  5. Spread the potato mixture into a greased baking dish. Top with remaining cheddar cheese, butter pats, and paprika.
  6. Bake for 25-30 minutes or until bubbly and golden brown.
