  • 3 tbsp white or red miso paste
  • 2 tbsp honey or maple syrup
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 2 green onions, sliced
  • 1 tbsp toasted sesame seeds

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the eggplants in half lengthwise and scoop out some flesh to create boats.
  3. In a bowl, mix miso paste, honey (or maple syrup), soy sauce, and sesame oil until smooth.
  4. Generously brush the glaze over each eggplant half.
  5. Place cut-side up on the baking sheet and roast for 25-30 minutes until tender and caramelized.
  6. Garnish with green onions and sesame seeds before serving.
