Instructions

  2. Gradually add cold water until dough holds together. Press into mini tart pans and prick with a fork.
  3. Bake for 15 minutes until lightly golden brown. Cool completely.
  4. For lemon curd, whisk lemon juice, zest, sugar, and eggs in a saucepan over medium heat. Stir continuously until thickened (about 10 minutes).
  5. Strain the curd through a fine mesh sieve and let cool slightly before filling cooled tart shells.
