  • 200g feta cheese
  • 4 large eggs
  • 1 cup cherry tomatoes, halved
  • 2 tbsp extra virgin olive oil
  • 1 cup fresh spinach
  • 2 cloves garlic, minced
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly coat an oven-safe baking dish with olive oil.
  2. In the baking dish, combine halved cherry tomatoes, fresh spinach, minced garlic, and drizzle with olive oil. Sprinkle dried oregano on top.
  3. Place the block of feta cheese in the center of the vegetables and crumble slightly.
