  • 2 salmon fillets (6 oz each)
  • 1/2 cup pure maple syrup
  • 2 tbsp Dijon mustard
  • 1 cup quinoa
  • 2 cups water
  • 1 cup seasonal veggies (e.g., bell peppers, zucchini)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rinse quinoa under cold water, then combine with 2 cups of water in a saucepan. Bring to a boil, cover, and simmer for about 15 minutes until fluffy.
  3. In a bowl, whisk together maple syrup and Dijon mustard until smooth.
  4. Place salmon on the baking sheet, drizzle half of the glaze over it, and bake for 12–15 minutes until flaky.
  5. While salmon roasts, heat olive oil in a skillet over medium heat and sauté veggies for about 5 minutes until tender-crisp.
  6. Serve by layering quinoa as the base, topping with salmon and sautéed veggies, then drizzling remaining glaze over everything.
