  • 1 lb carrots, peeled and cut into 1-inch pieces
  • 1 lb parsnips, peeled and cut into 1-inch pieces
  • 1/3 cup pure maple syrup
  • 1/4 cup bourbon
  • 3 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small saucepan over medium heat, melt the butter. Add the maple syrup and bourbon, stirring for about five minutes until slightly thickened.
  3. In a large bowl, toss the carrots and parsnips with salt and pepper. Pour the glaze over them and mix until well coated.

  5. Roast for 25-30 minutes or until tender and golden brown.
