  • 1.5 lbs beef chuck roast, cut into 1-inch cubes
  • 1 cup Cabernet Sauvignon
  • 2 medium carrots, diced
  • 8 oz cremini mushrooms, sliced
  • 2 ripe avocados, diced
  • 1 onion, chopped
  • 3 cups low-sodium beef broth
  • 1 bouquet garni (thyme and bay leaf)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare ingredients by seasoning beef cubes with salt and pepper and chopping vegetables.
  2. Brown the meat by heating oil in a Dutch oven over medium-high heat. Brown beef cubes in batches; set aside.
  3. Sauté vegetables by adding onions, carrots, and mushrooms to the same pot; sauté until softened.
  4. Deglaze the pot with red wine and reduce by half.
  5. Combine everything by returning beef to the pot with bouquet garni and covering with beef broth. Simmer on low for about 2 hours until fork-tender.
  6. Finish by stirring in diced avocado just before serving.
