Lemon Blueberry Yogurt Loaf is a delightful blend of zesty lemon and juicy blueberries, creating a moist loaf that’s perfect for any occasion.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup full-fat Greek yogurt
  • ½ cup vegetable oil
  • 2 large eggs (room temperature)
  • Zest and juice of 2 lemons
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt until combined.
  3. In another bowl, beat the sugar and eggs until light and fluffy. Stir in the yogurt, vegetable oil, lemon zest, and lemon juice until smooth.
  4. Gradually fold the dry ingredients into the wet mixture until just combined. Gently fold in the blueberries.
  5. Pour the batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
  6. Allow to cool for 10 minutes in the pan before transferring to a wire rack to cool completely.
