  • 1 bell pepper (any color), thinly sliced
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup

Instructions

  1. Press tofu between paper towels for 15 minutes to remove excess moisture. Cut into bite-sized cubes.
  2. While tofu drains, chop bell peppers, broccoli florets, and carrots into bite-sized pieces.
  3. In a small bowl, whisk together soy sauce, sesame oil, maple syrup, and minced garlic; set aside.
  4. Heat oil in a large skillet over medium-high heat. Sauté tofu until golden brown on all sides (about 8-10 minutes).
  5. Add chopped vegetables to the skillet and stir-fry for another 5 minutes until tender yet vibrant.
  6. Pour the sauce over the stir-fried tofu and veggies; toss until well-coated and cook for an additional minute.
  7. Serve hot with rice or noodles.
