Ingredients

Scale
  • 1 ½ cups basmati rice
  • 1 lb boneless lamb shoulder, cut into chunks
  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 1 cup plain yogurt
  • 2 tsp cumin seeds
  • 1 cinnamon stick
  • 4 cardamom pods
  • ½ tsp chili powder
  • Salt to taste
  • 2 tbsp cooking oil
  • Water (for cooking rice)

Instructions

  1. 1. Marinate the Lamb: In a bowl, mix yogurt, garlic, ginger, cumin seeds, salt, and chili powder. Coat lamb chunks well and let marinate for at least one hour or overnight.
  2. 2. Cook the Onions: Heat oil in a large pot over medium heat. Add sliced onions and cook until golden brown (10-15 minutes).
  3. 3. Brown the Meat: Add marinated lamb to the pot and sear on high heat until browned (about 5 minutes).
  4. 4. Add Rice and Spices: Wash basmati rice until water runs clear. Add rice to the pot with twice its volume in water, cinnamon stick, and cardamom pods. Stir gently.
  5. 5. Simmer: Bring to a boil; then reduce heat to low, cover tightly, and simmer for about 25-30 minutes until liquid is absorbed and rice is fluffy.
  6. 6. Fluff and Serve: Let sit covered for an additional ten minutes before fluffing gently with a fork. Serve warm.
