  4. Combine wet and dry ingredients until just blended; fold in kimchi, cheddar, and green onions.
  5. Pour about half a cup of batter onto the skillet for each pancake. Cook until bubbles form (3-4 minutes), then flip and brown the other side.
  6. Serve hot with extra kimchi or a drizzle of soy sauce.
