  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 cup eggnog (store-bought or homemade)
  • ¼ tsp ground nutmeg
  • ¼ tsp ground cinnamon

Instructions

  1. Mix graham cracker crumbs and melted butter until combined. Press into the bottom of a greased springform pan.
  2. Beat cream cheese and sugar in a bowl until smooth. Add eggs one at a time, mixing well after each addition. Stir in eggnog, nutmeg, and cinnamon until blended.
  3. Pour the filling over the crust in the springform pan.
  4. Add one cup of water to your Instant Pot and place the trivet inside. Lower the springform pan onto the trivet and secure the lid.
  5. Set to pressure cook on high for 35 minutes. Allow natural release for 10 minutes before quick-releasing any remaining steam. Chill before serving.
