  • 3 lbs bone-in pork shoulder
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 1/2 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lime juice
  • 2 tsp ground cumin
  • 1 tsp Mexican oregano
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper (adjust to taste)
  • 2 tbsp olive oil (for sautéing)

Instructions

  1. Cut the pork shoulder into large chunks for even cooking.
  2. Set the Instant Pot to 'Sauté' mode. Heat olive oil and sauté onions and garlic until fragrant (about 2 minutes).
  3. Add pork chunks, cumin, oregano, salt, pepper, orange juice, and lime juice. Stir well to coat.
  4. Seal the Instant Pot lid and cook on 'Manual' high pressure for 60 minutes.
  5. After cooking, allow natural pressure release for 10 minutes before quick releasing the remaining pressure.
  6. Carefully remove the pork and shred it using two forks. For added crispiness, spread shredded pork on a baking sheet and broil for about 5 minutes.
  7. Serve with warm tortillas and your favorite toppings.
