  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp Cajun seasoning
  • 1/4 cup hot honey
  • 1 cup heavy cream
  • 8 oz fettuccine pasta
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup fresh basil leaves
  • 1/2 cup crumbled feta cheese
  • 2 cups Brussels sprouts (trimmed and halved)
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts generously with Cajun seasoning on both sides.
  3. In a large skillet over medium-high heat, add olive oil and sear chicken for about 5 minutes on each side until golden brown and cooked through.
  4. Boil water in another pot; cook fettuccine according to package instructions. In a saucepan over low heat, combine heavy cream and Parmesan until melted and smooth.
  5. Mix fresh basil and feta cheese in a small bowl to create the basil feta swirl.
  6. Spread Brussels sprouts on the baking sheet, drizzle with olive oil, sprinkle with salt, and roast for about 20-25 minutes until crispy.
  7. Combine cooked pasta with the Alfredo sauce, then plate with chicken on top. Drizzle with hot honey and finish with the basil feta swirl and crispy Brussels chips.
