  • 1/2 cup unsweetened cocoa powder

  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup whole milk (or almond/oat milk)
  • 1/4 cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup unsweetened cocoa powder
  • 2 tbsp heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, and sugar until well combined.
  3. In another bowl, whisk together eggs, milk, oil, and vanilla extract. Gradually mix this into the dry ingredients until just combined; do not overmix.
  4. Scoop the batter into each cupcake liner about two-thirds full.
  5. Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. For frosting: Beat softened butter and powdered sugar until fluffy. Mix in cocoa powder and heavy cream until smooth. Frost cooled cupcakes generously.
