  • 14 oz firm tofu, pressed and cubed
  • 2 tbsp honey
  • 3 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tbsp sesame oil
  • 1 cup bell peppers (any color), sliced
  • 1/2 cup toasted cashews

Instructions

  1. 1. Press the tofu between two plates or use a tofu press to remove excess moisture.
  2. 2. In a bowl, whisk together honey, soy sauce, garlic, and sesame oil. Add cubed tofu to the mixture and marinate for at least 15 minutes.
  3. 3. Heat oil in a large skillet over medium-high heat. Sauté sliced bell peppers until tender-crisp, about 5 minutes.
  4. 4. Push veggies aside and add marinated tofu to the skillet. Cook until golden brown on all sides, about 8 minutes.
  5. 5. Pour remaining marinade into the skillet along with toasted cashews; stir to coat evenly and cook for an additional 2 minutes.
