  • 2 tbsp dried culinary lavender buds
  • 4 large egg yolks
  • 1/3 cup granulated sugar (plus extra for topping)

Instructions

  1. Preheat your oven to 325°F (160°C). In a saucepan, combine heavy cream, honey, and lavender; warm gently without boiling for about 5 minutes. Remove from heat and steep.
  2. In a bowl, whisk egg yolks and sugar until pale and smooth. Gradually add the warm cream mixture while whisking continuously. Stir in vanilla extract.
  3. Strain the mixture through a fine-mesh sieve into ramekins placed in a baking dish. Add hot water to the dish halfway up the ramekins.
  4. Bake for 30-35 minutes until set but slightly wobbly in the center. Chill for at least two hours or overnight.
  5. Sprinkle sugar on top of each custard and caramelize using a kitchen torch or broiler until golden brown.
