  • 4 Boneless, Skinless Chicken Breasts (about 1.5 pounds)
  • 1 cup Ricotta Cheese
  • 1/4 cup Fresh Basil, chopped
  • 1/4 cup Fresh Parsley, chopped
  • 1 tsp Fresh Thyme, chopped
  • 3 cloves Garlic, minced
  • 1/2 cup Grated Parmesan Cheese
  • 2 tbsp Extra Virgin Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with nonstick spray.
  2. In a bowl, combine ricotta cheese, garlic, basil, parsley, thyme, and parmesan until well mixed.
  3. Butterfly the chicken breasts by slicing them horizontally without cutting all the way through.
  4. Generously stuff each chicken breast with the ricotta mixture and secure openings with toothpicks or kitchen twine.
  5. Rub stuffed chicken with olive oil and season with salt and pepper. Sear in a hot skillet for about 3 minutes on each side until golden brown.
  6. Transfer to the baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C). Rest for five minutes before serving.
