  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 cup unsalted cold butter, cubed
  • 34 tbsp ice water
  • 1/2 cup mascarpone cheese
  • 3 medium heirloom tomatoes, sliced
  • 1 tsp sumac
  • Salt to taste
  • Olive oil for drizzling

Instructions

  1. In a bowl, whisk together flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Shape into a disk, wrap in plastic, and chill for 30 minutes.
  2. Preheat oven to 400°F (200°C).
  3. Roll out chilled dough on parchment paper into a large circle. Spread mascarpone cheese over the dough, leaving a 1-inch border.
  4. Layer sliced heirloom tomatoes on top of mascarpone. Sprinkle with sumac and salt.
  5. Fold edges of dough over the tomatoes and brush with melted butter if desired.
  6. Bake for 30 minutes or until golden brown. Drizzle with olive oil before serving.
