  • 9 no-boil lasagna noodles
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup sliced mushrooms
  • 1 medium zucchini, thinly sliced
  • 1 cup soaked cashews (unsalted)
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 28 oz canned crushed tomatoes
  • 3 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C) and lightly coat a baking dish with cooking spray.
  2. In a skillet over medium heat, sauté mushrooms, zucchini, and spinach in olive oil until softened (about 5 minutes).
  3. Blend soaked cashews, nutritional yeast, lemon juice, garlic powder, and salt until smooth to create the cheese sauce.
  4. Layer marinara sauce at the bottom of the dish followed by noodles, sautéed veggies, and cheese sauce; repeat until all ingredients are used.
  5. Top with marinara sauce and sprinkle with nutritional yeast or breadcrumbs.
  6. Cover with foil and bake for 30 minutes; remove foil and bake an additional 10 minutes until golden.
