  • 1 cup grated carrots (about 2 medium carrots)

  • 1/4 cup mayonnaise

  • 1 tsp Old Bay seasoning
  • 2 tbsp olive oil (for frying)

  4. Shape into patties about three inches wide and place on a parchment-lined baking sheet.
  5. Heat olive oil in a skillet over medium heat. Cook patties for about five minutes on each side until golden brown.
