  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ¾ cup brown sugar, packed
  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • ¾ cup milk (whole)
  • ¼ cup molasses

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, ginger, cinnamon, and salt.
  3. In another bowl, cream the softened butter and brown sugar until fluffy. Add eggs one at a time, mixing well after each.
  4. Gradually add milk and molasses to the butter mixture until combined. Fold in the dry ingredients until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow cooling completely before frosting as desired.
