  • 4 oz cod fillets (fresh or frozen)
  • 1 cup bok choy, chopped
  • 1 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tsp sesame oil
  • 1 tsp cornstarch mixed with 1 tbsp water

Instructions

  1. Preheat the oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. In a bowl, whisk together soy sauce, honey (or maple syrup), ginger, garlic, and sesame oil. Add the cornstarch mixture to thicken.
  3. Place the cod in the baking dish and coat with half of the ginger-soy mixture. Massage gently.
  4. Bake for 12-15 minutes until the cod is flaky.
  5. Meanwhile, heat oil in a skillet over medium heat and sauté bok choy for about 3-4 minutes until tender.
  6. Serve cod alongside sautéed bok choy and drizzle remaining sauce over the top.
