  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cut chicken into bite-sized pieces and place in a large bowl.
  2. In the bowl, combine olive oil, minced garlic, grated Parmesan, lemon juice, oregano, salt, and pepper. Mix well until chicken is coated.
  3. Cover and marinate in the refrigerator for at least 30 minutes (up to 4 hours for best flavor).
  4. Soak wooden skewers in water for 15 minutes (if using metal skewers, skip this step).
  5. Thread marinated chicken onto skewers (add bell peppers or onions if desired).
  6. Preheat grill to medium-high heat (400°F). Grill kebabs for about 10-12 minutes, turning halfway through.
  7. Serve hot with additional melted butter or Parmesan if desired.
